Like lots of people in the Continental US today, we’ve got snow. Not quite the 14 inches they predicted, but a solid 6-10 and a world away from this past Friday. And while the phrase “snow day” doesn’t inspire quite the same glee as it did back in my school/work days, I’m trying to make it fun instead of freaking out about the fact that we’ll be inside all day.
My first order of business this morning? Pumpkin Waffles. Yes, that’s right. Say it with me, and see if you can avoid drooling: Pumpkin. Waffles. While the kids were eating their usual banana and Eggo combo, I got to work on a batch of these bad boys.
I make ‘em with a little extra pumpkin, a little extra spice, and some wheat flour. They’re super yummy, smell awesome, and I freeze most of them to throw in the toaster for the rest of the week. (Just make sure they’re completely cooled before you put them in the freezer.) 
If you want a tasty and more nutritious topping alternative to syrup, I strongly recommend cream cheese. Hat tip to my real-life friend and HDYDI mom Rebecca for both the original inspiration (she and her hubby served these to us when all of our kids were much smaller) and the topping suggestion.
Both kids were extra nutty for them, despite having already eaten breakfast. Both kept signing “more” and asking for “wa-wa.”
Other than that, M is upstairs hiding working from home. We’re all staying in our pajamas. I’m allowing a bit more TV than we normally watch. Play-doh has already come out three times, and I built my very first fort (well, first since being a mom…). Where I saw a tunnel, the kids saw a climbing structure and slide. To each their own.
So far, not a bad day to be stuck inside. Hell, we’ve made it nearly to lunchtime without major injury or meltdown. With toddlers, that’s a success!















I am definitely going to try the pumpkin waffles. My kids eat waffles pretty much every day for breakfast (they aren’t big on variety) so I think this will be a nice way to switch things up a bit. And I love the idea of freezing them and using them during the week. I think they will be a big hit!

I think I’m the only person in the world who doesn’t like pumpkin! I’ll see if I can sub sweet potato in there though.

Pumpkin waffles…mmmmm…one of my favs! I make whole wheat waffles every Sunday and add pumpkin spice, but that’s not nearly the same as yours. One of my kadiddle’s first words was “waffle” she eats them so much.
We were driving through lots of snow yesterday coming home from vacation, but it missed us here in Southeast Tennessee. I hope you have tons of fun indoors!
Yummers!! I love the pumpkin panckaes at IHOP but I’ve never had homemade pumpkin waffles. Sounds awesome
And seeing your little tykes – I can’t wait for mine to be toddlers – they are just too cute!

We DID have a sledding injury (as Sarah was ascending the hill, a young snowboarder hit her squarely in the shins. Ouch.) this morning, but all seem to be regrouping well. Snowmen later.

I had to chuckle at the eggo and bananas for breakfast because that is exactly what my two had this morning! It make for a great on the go breakfast too, when I have to get the older 4 to school. I think I will go make the pumpkin waffles now for future breakfasts..thanks for the inspiration!
Mmmmm. Those sounds good and I just happen to have a can of pumpkin left over from the holidays that I was wondering what to do with!

Mmm! I’ver never been interested in getting a waffle maker, but now that I read your post, I want to get one. The babies eat Eggo waffles all the time and love them. I love pumpkin! My husband usually makes pumpkin pancakes from an allrecipes.com recipe which is soo yummy. I also found another recipe on there where you can use a whole can of pumpkin instead of water, oil, and eggs when making cake from a box; healthier and we can’t tell a difference. It’s so moist, too! Thanks for the recipe!
