Pork Chops with Applesauce

Another quick recipe as a companion to my post today over at the Ladies of Loserville: the pork chops my mom always used to make, which are awesome with a little fresh applesauce.

Pork Chops

Ground Allspice
Garlic Powder
2 Bay Leaves, crumbled
Salt
Fresh ground pepper

3-4 boneless center-cut pork chops

Amounts are totally approximate, but I’m going to say roughly a tablespoon each of the allspice and garlic, maybe half as much salt and some healthy grinds of pepper.  Mix the spices in a small bowl, then coat pork chops with the rub.  Be generous and fully coat the meat.  Store them in an airtight container or ziploc bag (feel free to toss in any remaining spice mixture) for several hours (you could easily do this in the morning to have for dinner that night).

When you’re ready to cook, first wipe off as much of the spice rub as you can, and pat the chops dry.  They’ll be plenty well-seasoned.  Either saute in a pan with a little olive oil or nonstick spray, or grill them.  Be careful not to overcook, because they can really dry out.  Serve with applesauce (instructions below, if you need them).  I like steamed broccoli and couscous as side dishes.

Fresh Applesauce

This is so easy, it’s almost embarrasing to post the instructions.  But if you’ve never made your own applesauce, you really must do it now.  You may never go back to the stuff in the jar.

Apples, however many you like (at least 2 pounds, I think!)
Lemon
Cinnamon stick
Sugar (optional)

Equipment:
large saucepan or pot
food mill or potato masher

A mixture of different types of apples is always nice, I think.  Some, like Granny Smith, will stay firm when cooked and make for a chunkier applesauce.  Some, like McIntosh, turn to mush almost immediately.  I don’t think you can go wrong with a mix of Golden Delicious, Macoun, Jonagold, Gala, and the like.  There’s plenty of charts out there if you need help picking.

If you have a food mill, don’t even bother to peel them.  Just core and cut into sections.  If you’ll be using a potato masher, take the peels off before you core and section.  Dump them all into a pot, add maybe an inch or so of water in the bottom of the pot.  The juice of one lemon is a nice addition, as is a cinnamon stick dropped into the water.  Add a couple spoonfuls of sugar if you want, but you don’t need much at all (if any).

Cook on medium-high heat (covered) until the apples start to get mushy (some varieties will just get soft, others will practically disintegrate).  Once nice and soft or mushy, turn off the heat and remove the cinnamon stick.  Mash with a potato masher, or put the cooked apples through the food mill (if you left the skins on and had some red apples, the sauce will be kind of pink).  Include the water that’s still in the pot.

Seriously, that’s it.  Just grab a spoon and dig in (yes, warm fresh applesauce is awesome if you’ve never had it).  It will keep in an airtight container in the fridge for at least a week, I’d say.  If it lasts that long…

Searching for the Wagon

Alright, after all of the whining on a previous post and general dissatisfaction, my friend Marci has convinced me to join her back on the Weight Watchers point-counting bandwagon.  I never cancelled my membership from earlier this year, I’ll hit the grocery store tonight, and I’ll weigh in and start counting my points tomorrow.

Me being me, of course, I was thinking about blogging it.  Anyone want to join in on a group weight loss blog with me?  It can be any (healthy) method you choose, but I know peer pressure social support is always helpful.  Leave a comment or drop me an email (goddessinprogress . blog @ gmail . com) and we can discuss details…

Down Five

Well, 5.5, actually.

In keeping with my New Year’s goals, I started Weight Watchers last week. I didn’t mention it then, and I don’t plan on making this blog about my weight issues. But since I had said I was going to do it, I wanted to also say that I followed through.

I have a long history with WW. I’ve counted my points quite a number of times over the past 10 years. And every time, I know it works. I know it’s a smart way of doing things, a good tool to help me learn how to eat, not just “diet.” It doesn’t restrict your food in a “you must eat this, you can’t eat that” kind of way. For those who aren’t familiar with it, the “plan” takes the nutritional info from any given food and uses it to assign a certain number of points. Depending on your current (not desired, but current) weight, you are allotted a number of points per day, plus an extra allowance to use over the course of the week, if you want. So, no one is going to tell you that you can’t have that piece of cheesecake. You can decide that using 15 of your daily 26 points is worth it. Or not. So, it’s a good tool to use to decide which choices are worth it to you, and which aren’t.

And, at least for me, it works. When I’m counting my points and writing down what I’ve eaten that day and drinking my water (yes, water again, always water), the weight comes off. As with anything, it’s a question of commitment and complacency. I lose some weight, I’m happy with my results. But then I get comfortable with the new weight, and I start to slack off. A wedding, a holiday, and suddenly I’m not writing things down and I’ve stopped getting on the scale every week. And then, before I know it, I’m back where I started (or worse). Alas.

I truly believe that people who have never struggled with their weight literally do not understand what it’s like. M’s grandmother is one of these people. She can’t for the life of her figure out why, if we know what the right/healthy choice is, why we have a weight/food problem. Or why we don’t just decide to eat less. People without weight issues don’t see what on earth could be so hard about just “eating better.” Well, conversely, I don’t understand how some people can have two bites of dessert and say “mmm, that was good!” and push it away. Um, hi. If it’s good, I want more!

Alright, I said I wasn’t going to make this blog about weight issues, and I mean it. There’s my update, I’m back on the WW bandwagon (online only, as I refuse to attend meetings anymore). And after one week (admittedly, a week that included a stomach bug, but I’ve never been one to lose weight while sick), I’m down 5.5 pounds. Only… a lot more to go.

Now, back to our regularly scheduled baby programming…

New Year, Better Me

Resolutions are so cliche, I know, but I think I should write them down in the hopes of holding myself accountable. They’re more “goals” than resolutions. But I think it’s a good exercise, anyways, to think about the ways in which you’d like to improve yourself or your life. So, here’s my list.

  1. Lose weight. Yes, the ultimate New Year’s cliche. But I’m still holding on to way too much baby weight, and it’s just not acceptable. Most likely I’ll go back on Weight Watchers. I’ve done it before, and it works for me every time. It’s just that I lose steam… Ah well. Gotta keep trying. But this resolution has several sub-goals, which are more specific markers to reach for:
    • Wear wedding rings. I haven’t worn my wedding and engagement rings since I was about 12 weeks pregnant. I really miss them, but I want to try and avoid having them re-sized.
    • Stop wearing maternity clothes. My dirty little secret is now out. I still sometimes wear maternity clothes outside of the house. Stacey and Clinton just felt a small part of them die inside. Well, it ends with the new year. No more maternity clothes (except as pajamas, because they sure are comfy).
    • Shop at Ann Taylor Loft again. Must fit fat ass into real pants. Must get out of plus sizes. Lane Bryant is a good option, and all, but I know I can be in the regular sizes again.
  2. Exercise. Related to, but separate from the weight loss. I need it to clear my head, I need it to be in better shape for my kids. I need to be stronger, so I can keep up with my babies-who-will-soon-be-mobile. And I need to not throw my back out. That’s not cool.
  3. Get a babysitter. Necessary for accomplishing goal #2, but also necessary for my sanity. I love my kids more than anything, but I need a break sometimes. And there’s literally no way I’ll ever get to the gym without a sitter to watch the kids. This one is in progress, just waiting for the potential sitter to return from winter break.
  4. Be more baby-centered when the twins are awake. I feel as though I too frequently finish feeding the babies, then “put” them somewhere while I do something. Laundry, washing bottles, eating breakfast, whatever. And while that’s sometimes both necessary and good, as independent play is an important skill, I really think some of those tasks could wait (aside from breakfast) and I could just sit and interact with them more.
  5. Read to them. A more specific counterpart to goal #4. M and I both love to read, and were real bookworms as kids, and I hope to pass that love of books to our children. And, thanks to wonderful friends and family, we have an enormous library of children’s books from which to choose. Time to put them to good use. First step: at least two books per day.
  6. Be more productive when the twins are asleep. Sometimes getting them to sleep is so exhausting that I just want to veg out while they nap. And sometimes that’s just peachy. But if I’m going to be more centered on them when they’re awake, then I need to make better use of my time when they’re asleep.
  7. Finish their quilts. Seriously. It’s been way too long.
  8. Decorate their nursery. I have nursery envy from the one my dad set up, and I realized that their rooms here are a little minimalist for my taste. We’ve got picture frames and photos to put in them coming out the wazoo. Time to unleash my inner decorator.
  9. Take a photography class. I love taking pictures, of the babies in particular. And I just got a fancy new lens for my camera. But I know I’m not taking full advantage of my tools, so I’d like to learn how.
  10. Get back in touch with M. Last, but should not be least. It’s so easy, as all new moms know, to neglect your relationship with your husband when babies arrive. I’ve been trying not to, but I could do better.
